  • 3 large eggs, separated

  • 1 tsp vanilla extract
  • Zest of 1 lemon (optional, for brightness)
  • Pinch of salt
  • Powdered sugar, for dusting

Step-by-Step Instructions

Step 1: Prep

In a bowl, whisk yogurt, egg yolks, half the sugar, vanilla, cornstarch, and lemon zest until smooth.

Step 3: Whip the egg whites

In a clean bowl, beat egg whites with a pinch of salt until foamy. Gradually add the remaining sugar and beat until stiff peaks form.

Carefully fold the whipped egg whites into the yogurt mixture in 3 parts, keeping as much air as possible.
